Mango Cucumber Salad with Quinoa
We love adding fruits to salad because it gives a touch of natural sweetness to the whole dish. In this recipe, we added mangos but you could easily replace with fresh peaches when they are in season.

What you need:
For the salad:
- 1 mango, ripened, peeled and cut into small one-inch cubes
- 1 cup cubed seedless cucumber
- 1 celery stalk, cut into slices
- ½ cup red onion, cut into thin slices
- 1 cup canned black bean, salt-free, drained and rinsed
- 2 tbsp. fresh cilantro, chopped
- Sea salt and pepper to taste
- 2 cup cooked quinoa (to serve)
Optional add-on:
- 1 can tuna water-packed
For the dressing:
- 3 tbsp. olive oil
- 1½ tbsp. lime juice
- ¼ tsp. dry mustard powder
- 1 tsp. raw honey
- ½ tsp. chopped garlic
- Sea salt and pepper to taste
What you do:
- In a large bowl, mix together the mango, cucumber, celery, red onions, black beans and cilantro in a bowl.
- Whisk together all the dressing ingredients and adjust it to match your personal taste. Pour on the salad ingredients. Season to taste. Serve over the cooked quinoa.
