Mango Cucumber Salad with Quinoa

We love adding fruits to salad because it gives a touch of natural sweetness to the whole dish. In this recipe, we added mangos but you could easily replace with fresh peaches when they are in season.

What you need:
For the salad:

  • 1 mango, ripened, peeled and cut into small one-inch cubes
  • 1 cup cubed seedless cucumber
  • 1 celery stalk, cut into slices
  • ½ cup red onion, cut into thin slices
  • 1 cup canned black bean, salt-free, drained and rinsed
  • 2 tbsp. fresh cilantro, chopped
  • Sea salt and pepper to taste
  • 2 cup cooked quinoa (to serve)

Optional add-on:

  • 1 can tuna water-packed

For the dressing:

  • 3 tbsp. olive oil
  • 1½ tbsp. lime juice
  • ¼ tsp. dry mustard powder
  • 1 tsp. raw honey
  • ½ tsp. chopped garlic
  • Sea salt and pepper to taste

What you do:

  • In a large bowl, mix together the mango, cucumber, celery, red onions, black beans and cilantro in a bowl.
  • Whisk together all the dressing ingredients and adjust it to match your personal taste. Pour on the salad ingredients. Season to taste. Serve over the cooked quinoa.
